Every true espresso experience begins with a unique sound: your machine grinding fresh coffee beans. This sound will set your other senses tingling with anticipation.
Every espresso specialty is a sight to behold. With espresso, the crema says a lot about the quality. Look for a smooth, sometimes streaky, hazel brown crema about 3-4 mm thick. The crema should last a while – to seal in heat and the aroma.
Before you take a first sip, inhale. With a good espresso, you should notice a rich ensemble of aromas interacting in harmony, plus a toasty note that comes from roasting. After tasting, exhale. Look for a lasting aroma – of butter, warm bread, puff pastry, and chocolate.
The warmth of the cup in their hands is special for most coffee fans, but the temperature of espresso itself is crucial. When it first touches your lips, it should be around 65°C. You should notice a pleasant, slightly velvety sensation below your palate, too.
People can perceive five different tastes: sweet, sour, bitter, salty and umami (meaty, savory, or brothy). After your first sip of an espresso coffee, you should taste a fantastic range of nuances in all five directions.
Legend has it that the magic of coffee beans was discovered by chance in ancient Ethiopia, when a goat herder noticed his goats were unusually excitable after munching on the fruit of a particular tree. The art of making coffee has come a long way since then!
There are two main sorts of coffee bean: Arabica and Robusta. Arabica beans give us an aroma that is both mild and deep - for an incomparable espresso experience. The Arabica tree grows between 900 and 2000 meters above sea level and needs temperatures between 15° and 24°C. Robusta grows lower down (200 to 600 meters) and likes things warmer - between 24° and 29°C. Robusta beans contain around twice as much caffeine and produce powerful espresso with a bitter taste.
Of the many different methods used to harvest coffee beans, only hand picking guarantees the very best quality. As coffee trees can flower up to eight times a year, they often hold ripe and unripe berries at the same time. Hand picking ensures only the ripe berries are picked.
Immediately after harvesting, the beans are removed from the cherries and transported to roasting facilities in jute bags (jute protects against humidity). The beans are roasted between 200° and 240°C, which gives them their familiar color. The temperature determines the final shade of the beans – as well as their unique aroma.
Blending involves matching different types of beans to produce a harmonious flavor. With countless varieties of roasted beans available, the number of potential blends is immeasurable. It takes years of practice and a great deal of skill to successfully match one bean with another.
Once the beans are unpacked, brewing can begin. Which is where your Philips Saeco bean-to-cup espresso machine comes in. It grinds the beans fresh, heats the water to some 90°C and forces it through exactly the right amount of coffee grinds at high pressure, thanks to the 15 bar pump. The result is espresso fit for the connoisseur, with a full body and intense, rich flavor – sealed in by a delicious, hazel-brown crema.
