On hot summer days, you need something cool and refreshing. This buttermilk soup does the trick.
Servings 4 persons, Preparation time 0 minutes, Cooking time: 23 minutes
- 1 red chilli
- 500 g sweetcorn (can)
- 150 g chopped onions
- 2 garlic cloves
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp curry powder or ground turmeric
- 550 ml vegetable stock
- pepper, salt
- 500 ml buttermilk
- Deseed the chilli. Drain the sweetcorn.
- Place all of the ingredients, except the buttermilk, into the soup maker. Close the lid and select the smooth soup program.
- When the soup is ready, open the lid and pour the soup into a container. Add the buttermilk and chill for at least 3 hours (or overnight) in the fridge before serving.
