    Christmas soup: Delicious winter soups to make at home


    When it’s cold outside, there’s nothing more welcoming than a warm and hearty bowl of soup. From Christmas to New Year, we have some hearty winter soups to break out during the holidays. Read on for simple Christmas soup ideas to whip up with ease.

    Winter soup recipes: Carrot and celeriac


    This combo is a real winner. The spices and root vegetables harmonise beautifully, warming you through from your head to your toes. It’s an easy-to-prepare chunky winter vegetable soup that tastes delicious and makes a perfect Christmas soup thanks to its creamy consistency and festive spices.

    Ingredients:

     

    • 1 tbsp. olive oil
    • 225g carrots (grated)
    • 390g of celeriac
    • 45g potato (peeled and chunked)
    • 20g onions (chopped)
    • 30g garlic cloves (peeled and minced)
    • 1.5l vegetable stock
    • Salt and pepper (to taste)
    • 2 tsp curry powder
    • 1 tsp ground cumin
    • 1 tsp ground coriander
    • 1 small piece of ginger (peeled and chopped)
    • 125ml coconut milk OR 120g crème fraîche

    Directions:

     

    1. First, gently warm your spices, onion, and garlic together in a pan with the olive oil. This will help you achieve maximum flavour.
    2. Once the onions are soft, add the carrots, celeriac, and potato, mixing all the ingredients together. Cook for 10 minutes, then add the vegetable stock. 
    3. Simmer for around a quarter of an hour. Alternatively, simmer until all the vegetables are nicely softened. 
    4. Now it’s time to purée your soup using a blender. Blend until it reaches a smooth consistency.
    5. Now to fold in your crème fraîche or coconut milk. This will give it a velvety smooth finish.

    1. Add your ingredients to the machine, minus the crème fraîche or coconut milk.
    2. Select the pureed setting.
    3. Let the soup maker do the work for you.  
    4. Mix in the crème fraîche or coconut milk just before serving!

    Winter stews and soups: Chicken and vegetable

     

    Chunky chicken winter stews and soups make a hearty and warming choice, perfect for large gatherings with family and friends. For an extra seasonal touch, serve your soup along with some cranberry sauce!

    Ingredients:

     

    • 1 tbsp. olive oil
    • 500ml low-sodium chicken broth
    • 1 onion (peeled and chopped)
    • 2 medium-sized potatoes (peeled and diced)
    • 1 can of cream of chicken soup
    • 140g cooked chicken (chopped)
    • 80g frozen mixed vegetables (thawed)
    • ½ tsp dried thyme
    • 2 tbsp cranberry jelly
    • 1l water

    Method:

     

    1. Add potatoes to a large pan of water and bring to a boil. Cook until soft, strain and leave to the side.
    2. Heat the olive oil in a warm pan. Add the frozen vegetables, onions, and dried thyme. Cook until soft. 
    3. Add the cooked chicken and cream of chicken soup. Cook over a low heat for 10 to 15 minutes. Season with salt and pepper. 
    4. Blend the ingredients together. If you prefer, serve just as it is. Enjoy your chunky soup alongside your potatoes.

    The best winter soups: Pumpkin soup with chorizo and winter spices

     

    Pumpkin is a great base for hearty winter soups. Use this recipe for pumpkin and chorizo soup to spice up a festive end-of-year party with its winter flavours. Plus, you can mix up this recipe or make a vegetarian version by leaving out the chorizo and adding in leeks and maybe some crème fraîche!

    Ingredients:

     

    • 450g pumpkin (pureed)
    • 200g chorizo
    • 2 garlic cloves (peeled and crushed)
    • 1 carrot (peeled and chopped)
    • 1 onion (peeled and chopped)
    • 80g chickpeas (drained and rinsed)
    • ½ red chili pepper (without seeds)
    • 1 vegetable stock cube
    • 120ml heavy cream
    • Toasted pumpkin seeds
    • Parsley to garnish

    Method:

     

    1. In a pan, warm the olive oil, onion, garlic, chili pepper and chorizo for around 5 minutes. Add the chopped carrot and continuously stir the mixture. 
    2. Dissolve your vegetable cube in hot water, then add the stock bit by bit to the pan. Season the soup, reducing the heat to a simmer for around a half hour. 
    3. Add the pumpkin. Cook for another 15 minutes.
    4. Finally, transfer to a blender. Once the soup is smooth, heat through and fold in some parsley.
