    Wild mushrooms with parsley

    An easy but gorgeous blend of wild mushrooms that makes an easy side dish to meat, or a vegetarian topping for polenta, pasta, risotto or crusty bread

    Servings 4 persons, Preparation time 5 minutes, Cooking time: 11 minutes

    Ingredients

    • 2 tablespoons olive oil
    • 2 tablespoons butter
    • 1 clove garlic, chopped
    • 450g wild mushrooms (2 or 3 different varieties)
    • Salt and freshly ground black pepper, to taste
    • 1 small bunch flat-leaf parsley, chopped

    Directions

    • Ensure the stirrer attachment is in place in the pan of the HomeCooker; set the temperature to 130°C for 3 minutes. When the pan is heated, add the olive oil, butter and garlic; cook for 2 minutes
    • Sit the Cutting Tower alongside the HomeCooker with the thick slicer in place. Run through the mushrooms (or slice by hand). Season with salt and pepper and cook for 6 minutes; sprinkle over the chopped parsley and serve
    • Tip: This mushroom medley goes great with Polenta Concia or can be stirred into risotto
